Pasta Cooking/Storage Instructions

Cooking Pasta

Thank you for visiting Tortelli! Find cooking instructions for your fresh pasta below. All pasta should be cooked in boiling, salted water.

Tagliatelle

2 mins

These are fresh and very delicate and will cook in 90 seconds to 2 minutes. They should then be removed from the water and married with your sauce. 

Spaghetti

5 mins

This pasta is a little thicker and will cook in approximately 5 minutes, and then can be removed from the water, then married with your sauce. 

Cavatelli

6 mins

This is a slighly chewier pasta made from only flour and water.  Approx 6 minutes cook time. Then remove from the water and marry with your sauce.

Tortelli

2 mins

These are delicate and should be cooked at a gentle rather than a rolling boil for about 2 minutes before being removed from the cooking water and tossed gently with butter emulsion or sauce. 

Pappardelle

2 mins

These wide shapes will also cook very quickly in about two minutes in boilinb salted water, They can be removed from the water into the sauce and married toether with the sauce in the pan. 

Gnocchi

2 mins

Gnocchi will float when they are cooked, in about two minutes. Allow to cook an additional thirty seconds before removing into your sauce. 


Storing Pasta

Find storage instructions for your pasta below. All pasta should be refrigerated or frozen.

Fresh Spaghetti, Pappardelle and Tagliatelle

2 days

Cook within two days of purchase or freeze. If storing in the fridge, open the pasta box to avoid condensation build up. Add two minutes to cooking time for frozen pasta. 

Cavatelli

3 days

Cook or freeze your cavatelli within 3 days. If storing  in the freezer, add two minutes to your cook time. 

Tortelli

1 day

Our filled pasta should be cooked on the day of purchase or the day after. If storing overnight, store in the fridge with the box open to avoid the build up of moisture.  Some fillings will freeze better than others, and we find that the pasta often breaks when frozen. We believe these are best enjoyed fresh. 

Gnocchi

1 day

Gnocchi should be stored in the refrigerator until cooked. If you do not plan to cook them on the day purcahsed, you can blanch them in boiling salted water and remove into an ice bath. You can then continue to reserve your gnocchi in the refrgerator for an additional 3-4 days.
